Strauben recipe in Trentino!

Strauben they are Tyrolean sweet pancakes typical of Trentino Alto Adige. Quick and easy to prepare, they can be made all year round and are perfect for Carnival. During Carnival you can taste many delicacies in the Dolomiti Walking hotels, after walking or snowshoeing in the woods, but in this article we want to reveal a secret recipe.

Strauben Trentino ingredients

Eggs 3
Whole milk 250 ml
Grappa 25 ml
Coarse salt 1 pinch
Sugar 50 g
Butter 25 g
00 flour 200 g

Frying ingredients
Peanut oil qs
Icing sugar to taste
Cranberry jam for strauben 1 tbsp

Strauben preparation

Pour the milk into a large bowl, then add the sifted flour and salt, mixing with a whisk to combine the ingredients. Add the melted butter, the small glass of grappa (about 25 ml) and the 3 egg yolks (keep the egg whites aside) to the mixture, continuing to mix.

Whip the egg whites until stiff and, continuing to beat, add the sugar; Pour the whipped egg whites into the flour and egg mixture and mix them delicately with a spatula or wooden ladle, so as to incorporate air and not dismantle them.

  • Put plenty of oil (or lard if you prefer) in a pan with a diameter of 25 cm which you will place on the heat; the oil must be very hot but not too hot (it must not exceed 170°), so that the batter can brown but not darken immediately (for this purpose, immerse a small quantity of dough in the oil to test the right degree of heat).
  • Take a funnel, plug the hole with a piece of cardboard or with your index finger and then pour about a ladle of batter into it.
  • Position yourself over the pan and remove your finger (or cardboard) from the funnel to release the batter which you will have to pour into the pan in a circular direction starting from the outside and continuing towards the center. As soon as the cake has taken on a golden colour, grab it with two slotted spoons and turn it to brown the other side.
  • Once browned, again with the help of slotted spoons, remove the strauben from the oil, let it drain and place it to lose the excess oil on several sheets of absorbent kitchen paper. Transfer the strauben to a serving plate, sprinkle it with icing sugar and place a spoonful of cranberry jam and/or whipped cream in the center of the cake. Serve immediately.
